Quickie Sandwiches and Trek Grub

So we had planned to go on a trek and since most of New Zealand is protected by a lot of conservation laws, the requirement for the grub was that it had to be packed in hard plastic. Further, to take advantage of the early bird offer on the fuller's ferry to Rangitoto, we had to start from home by 6:30 am. Another thought that had been bothering me from quite a few days now is the fact that I have not been serving any raw veggies/salads. Yes, we do eat a lot of fruits but almost no raw veggies. Hence, decided to buy a pack of mesculun leaves and use them in sandwiches.

Ingredients ( for 4 sandwiches) :

  1. 8 slices of multigrain sandwich bread
  2. 4 slices of cheese
  3. 4 tbsp of mayonnaise
  4. 12 chorizo slices - I used 3 in each sandwich
  5. 4 handfuls of mesculun leaves or any lettuce that you may prefer
  6. Salt to taste
  7. Pepper powder to taste.

How I made it :

  1. Spread about a tbsp of mayo on half the slices. 
  2. Place a cheese slice on the top
  3. Next place as many chorizo slices as you like
  4. Top with washed mesculun leaves.
  5. Sprinkle salt and pepper.
  6. Cover with another slice of bread.

The sandwiches were yummy and fulfilling as trek grub. The spicy chorizo was a good fit for the Indian taste.

Heart warming Chicken Sandwich with Sweet Corn Soup

While going to pick up the car from the service station, we saw two men selling ears of corn from the backside of a truck. He kept shouting "4 for 20 rupees". I told him I wanted just two and got some home. I wanted to make my sweet corn soup once more. This time I also got celery from the local store. Chopped pieces of celery leaves as well stalk when added to the soup make me go back in time to when I used to have this soup at home. This soup used to be made quite often at home. It is filling as well as good in the cold of Ooty. When tasting the soup with the celery added, I remembered that we used to have this with chicken sandwiches. It brought back one particular memory from the past.

Power cuts were quite common in Ooty when it rained. A tree would fall somewhere and there would not be power for days at end. On one such night, we were singing songs, a favorite time pass on a powerless evening, and munching these yummy chicken sandwiches along with the soup. My granny was around too and she would each time try to pry away the bollywood numbers from our minds and try to sing some songs in praise of god. Some of my most cherished memories and delectable combos.

Ingredients for 2 sandwiches :

  1. 4 slices of brown bread
  2. Butter
  3. 1 leg of chicken
  4. Salt to taste
  5. 1/4 tsp vinegar
  6. Pepper to taste
How I made it :
  1. Boil the chicken with salt, vinegar in water. I pressure cooked it for 2 whistles on high and 1 whistle on low. The vinegar makes the chicken stay white and cook faster. Retain water/stock for use in soups, curries for enhanced flavour.
  2. Shred the chicken into small pieces.
  3. Heat the tava. Place the slices of bread on the warm tava. The idea is to warm the slices through.
  4. Generously butter all slices of bread on 1 side each.
  5. Mix pepper into the chicken. 
  6. Take two slices of bread. Place them down with buttered side facing up. Spread chicken on the bread. Cover each with the other slice of bread with buttered side down.
  7. Serve hot with any soup of your choice. 
We had this with sweet corn soup and it was a whole lot things for me. A hearty meal indeed.

Grilled Cheese Sandwich


Ingredients :
Whole wheat bread - 2 slices
2 cheese slices
A little chopped onion
Pepper to taste
Chopped bell peppers
Butter about 1 tbsp
1 small green chilly finely chopped - adjust as per taste

How I made it :
1. Butter the bread.
2. Place a cheese slice on each slice of bread
3. Sprinkle some pepper. There is no need of salt as the processed cheddar cheese slices are already quite salty.
4. Sprinkle onions, green chillies and coloured bell peppers.
5. Grill in sandwich maker and voila hot, crispy sandwich is ready.

Chutney sandwiches - interesting sandwiches part II

I love my mom's pudina chutney. One very simple and easy sandwich would be the chutney sandwich. It is an ideal picnic option.

You will need :
2 slices of bread
1 stick of butter
1 tsp of pudina chutney

Method :
Spread the butter on one slice of bread.
Spread the pudina chutney on the other slice.
Place the slices of bread over one another. Go ahead and eat!!!

Interesting sandwiches

I almost always experiment with the vegetables that I buy. This time it was with Capsicum. I totally love this vegetable, once liked only on Pizzas.
I bought some eggless mayonnaise from the store nearby and sandwiches it is for breakfast the next morning.

Ingredients :
1 medium sized capsicum chopped finely
1 small sized onion chopped finely
1 carrot grated
2 green chillies finely chopped
2 tsp pepper powder
6tbsp eggless mayonnaise
4 slices of bread

Method:
Spread approx 3 tbsp of mayo on one slice of bread. Sprinkle green chillies, capsicum, onion, carrot and pepper over the mayo. Place the other slice of bread over this. Repeat this with the other 2 slices of bread. Toast/grill and enjoy with tomato ketchup.
