Herbed Citrus Marinated Lamb Cutlets

What better way to usher in the new year [and get back to giving the blog some attention] than to cook up something easy yet delicious?  These lamb cutlets that I made following the recipe from here were deliciously juicy and had us feeling like we had eaten at a fine dining restaurant. And yes, meat can be "Light and Refreshing". The orange is a very interesting addition which takes this to new levels. Make these and I am sure that you will agree.

Ingredients : Serves 4 as an appetizer
  • 12 french lamb cutlets
  • 1 small to medium sized orange
  • 2 tbsp lemon juice
  • zest of 1 lemon
  • 4 cloves of garlic
  • 2tbsp dried oregano
  • 1.5 tsp salt
  • 1 tsp freshly ground black pepper
  • 1-2 tbsp olive oil
How I made the Herbed Citrus Marinated Lamb Cutlets
  1. Using a hand scraper, grate the medium sized orange to get the zest.
  2. Juice the orange
  3. Pound the 4 cloves of garlic in a mortar and pestle
  4. Mix the orange juice from 1 medium sized orange, orange zest, 2 tbsp of lemon juice including lemon zest, 1.5 tsp salt, minced 4 cloves of garlic and 1 tsp of freshly ground black pepper powder
  5. Using a fork, prick a few holes in the 12 lamb cutlets to help ensure better marination
  6. Place the lamb cutlets in a ziploc bag and pour the marinade over. Mix well and rub it in to ensure that all pieces are coated. Place the closed bag into the refrigerator overnight to marinade.
  7. Remove the cutlets from the refrigerator at least 30 minutes prior to cooking
  8. Preheat oven to 120 degree C
  9. In a pan, heat 1-2 tbsp of olive oil
  10. Place the lamb cutlets without crowding them and cook on high to seal the meat until there is a dark brown colouring on both sides. 
  11. Place these on a baking tray and put in the oven for about 15-20 minutes.  I had used an airfryer and hence they needed just under 10 minutes
The resultant juicy, light and flavour packed lamb cutlets were gone in minutes.
We had this with braised red cabbage as a main.

Panneer Potato Cutlets

Living in a developed country means "HUGE". Almost nothing is under a kilogram at most supermarkets. Further, this is how one feels one is getting the bang for the dollar being spent. Like I felt when I picked up milk 2 weeks ago. Yes, 2 weeks ago. Coming from India where the milk would not last more than a day, here milk lasts for weeks. It is on my to do list to find out what it is that they add to make the milk last this long.(A friend clarified that the milk sold here is boiled and packed and therefore lasts longer. Thanks) So, I knew we would not consume all of the milk before the "best by" date and so I made some home made panneer. I use my blog as my recipe journal as well, which means, I revisit my own blog to check the recipe of dishes I have tried. Mom's panneer fingers are not on this as it is a business secret for C-store. So obviously, I don't have any written record of the recipe. Being in different time zones from your mother doesn't help either especially when she is definitely going to be fast asleep at the time that you are cooking up your meal.

Two of India's vegetarian snack favorites come together to make an even tastier snackSo I just put together things that would make a good cutlet and it was good. 

Ingredients (makes about 25 cutlets, each of about 1.5cm in diameter) :
For the panneer :
  1. Milk (Full fat works best and avoid UHT/long life milk) - 1 .25 litres
  2. Curd/Yoghurt - 4 tbsp
  3. Vinegar - 1/2 tsp
For the cutlet :
  1. Panneer - from the above or about 3/4 cup of shredded/grated/minced panneer
  2. Potatoes - 1 large boiled, peeled and mashed
  3. Green Chilly - 2 sliced thinly or chopped
  4. Red chilly powder - 1/2 tsp
  5. Garam masala powder - 1/2 tsp
  6. Bread crumbs - about 1/4 cup + more for dusting - see tips
  7. Salt to taste
  8. Oil for frying
How I made it :

  1. Pour the milk into a pan and bring to a boil.
  2. Just as the milk boils lower the heat and put in the curd and vinegar. 
  3. Mix well till you see the milk curdle and the fat separate. 
  4. Turn of heat. Drain the water to get fresh soft homemade panneer. Squeeze out as much water as you can from the panneer. This water can be retained and stored to be added to dough to make softer rotis or make naan.
  5. Now, add the panneer to the potato, green chillies, red chilly powder, garam masala powder. 
  6. Adjust the salt. 
  7. This may be a bit sticky so add the bread crumbs to make a dough that is not too sticky. Alternately, put into airtight container and leave in fridge overnight. 
  8. Heat oil in a kadai - sufficient to deep fry.
  9. Spread more bread crumbs on a paper or flat plate.
  10. Make small discs out of the dough. Dunk in more bread crumbs and press in those bread crumbs. Keep aside.
  11. Once oil is hot, deep fry the discs on both sides until golden brown.

Serve hot with pudina chutney or tomato sauce or mustard sauce

Tips :
  • You can make bread crumbs from fresh bread. Just put it into a mixie jar and use the pulse option.
  • If you want aired out bread crumbs, you could use dried toast or bread dried in the sun. These serve well to form that crust on the cutlets.

Eggplant/Aubergine Pizza

As part of the cooking course assignment I had to get into the nutritional information of "prepared eggplant". I assumed there would be a recipe too and had bought this big chinese eggplant from the grocery store. There was no assignment but I had some leftover pasta sauce and hence decided to put that together with the eggplants to clean out the fridge. I had seen a similar dish in a colleague's lunchbox and decided to have a go at it. It was yummy and gone in minutes.

I made the aubergine two ways this time. 2 slices as below and the remaining I pan fried with Indian spices after seeing this recipe on a friend's blog. Both were delicious.

This recipe boasts of meeting almost all of one's dietary fibre intake for a day while being low on the calorie intake.

Cooking time : 40 minutes

Ingredients (serves 1) :
  1. 1 large Aubergine/Eggplant
  2. 4-5 button mushrooms
  3. 1 small sized onion finely chopped
  4. 2 cloves of garlic crushed
  5. 4 tbsp chopped bell peppers - I did not use this as my pasta sauce was a roasted bell pepper sauce
  6. 1/4 cup pasta sauce/tomato sauce - I used Roasted Peppers Dolmio Pasta Sauce
  7. A handful of grated cheese
  8. Salt to taste
  9. Pepper
  10. Olive oil - a drizzle
How I made it :


  1. Preheat oven at 180 degree C.
  2. Slice the eggplants lengthwise with the slices being about a cm thick.
  3. Slice the button mushrooms and mix with onions, garlic, pasta sauce.
  4. Adjust salt and pepper.
  5. Spread atop eggplant slices.
  6. Sprinkle with cheese.
  7. Place eggplant slices in ovenproof plate/pan.
  8. Drizzle olive oil on top of slices.
  9. Bake the eggplant slices for 30 minutes.
  10. Serve hot

Quickie Soup

There are days when you feel like you've eaten a very heavy lunch and are not too hungry for dinner but you still would like to have something light. This quickie soup is just the answer to those tiny rumbles in the tummy.


Preparation Time : Nil
Cooking time : 10 minutes

Ingredients (serves 2) :

  1. Vegetable stock - 2 cups - I used the water remaining from boiled chickpeas and some veggies that I had boiled for cutlets.
  2. 1 egg
  3. 1 dry red chilly broken into two
  4. 1 clove of garlic crushed
  5. 1/2 tsp vinegar
  6. 1 tsp olive oil
  7. Salt to taste
  8. Pepper to taste
How I made it :
  1. In a pan, put in the oil, red chilli and garlic.
  2. Turn on heat and fry till garlic starts to turn brown at edges
  3. Carefully pour in stock.
  4. Add vinegar.
  5. Adjust salt and pepper.
  6. Let this come to a boil.
  7. Beat the egg and pour the egg into the mix while stirring the soup.
Hot, wholesome soup is ready to be served.
